Tonight on Sweet Genius the pastry hopefuls will use breakfast cereal to make a chocolate dessert, then works of art are made of candy and retro hair style and savory ingredients are utilized to make cake.
The Chefs competing tonight are as follows;
- Pastry Chef Jessica Marotta
- Pastry Chef Laury Hernandez
- Pastry Chef Amelia Dietrich
- Pastry Chef Anthony Leberto
Round 1: Chocolate Dessert – Mandatory Ingredients & Inspiration - 40 minutes

- Armadillo (inspiration)
- Wheat Breakfast Cereal
- Lychees
After the time expires in round one, the Chefs must present their Chocolate Dessert to Ron Ben-Israel and receive the following critiques and possible elimination;
Chef Amelia prepared Chocolate Mousse w/ Lychee Wheat Crumble. Ron said her mousse was light and creamy in texture but he could not detect the lychee.
Chef Anthony prepared Chocolate Mousse w/ Wheat Cereal Crust and Lychee Citrus Sauce. Ron said he enhanced the flavor of the lychee with the orange zest. He said the mousse was delightful but he wished there was more of it. He said the crust was chewy and crunchy.
Chef Laury prepared Bolitas de Chocolate w/ Wheat Cereal & Lychee. Ron said he liked the mousse and the flavors lingered but the dark chocolate takes over. He said it felt more like a candy dish.
Chef Jessica prepared Chocolate Semifreddo w/ Lychee Carmalized Wheat Cereal. Ron said the carmalized cereal was too hard though he liked the flavors going on. He said the semifreddo was light and pleasing.
After careful thought Ron told Chef Amelia that in this round she was no sweet genius.
Round 2: Candy – Mandatory Ingredients & Inspiration - 50 minutes

- Stained Glass (inspiration)
- Pomegranate
- Salted Plums
After the time expires in round two, the Chefs must present their Candy to Ron Ben-Israel and receive the following critiques and possible elimination;
Chef Laury prepared Isomalt Stained Glass Serving Trays w/ Butterscotch Clusters w/ Salted Plums. Ron said she truly captured the inspiration and the flavor on her plate were delicious but the popcorn in the clusters were soggy.
Chef Jessica prepared Marange Lollipops Served in a Chocolate Bowl. Ron said the ganache inside the pops was fun and tasted like wine. He said he detected a bitterness from the ground up pomegranate seeds. He said he seen no inspiration in her dish.
Chef Anthony prepared Cracked Isomalt Bits, White Chocolate Bark w/ Pomegranate Glaze & Milk Chocolate Coins w/ Plums. Ron said the bark worked well with the glaze. he said the coins and plums worked well together, but he was torn on the presentation of a deconstructed stained glass.
After careful thought he told Chef Jessica that she was no sweet genius in that round.
Round 3: Cake – Mandatory Ingredients &Inspiration – 60 minutes

- Bee Hive Hairdo (inspiration)
- Gnocchi
- Green Tomato’s
- Soy Sauce
After the time expires in round three, the Chefs must present their Cake to Ron Ben-Israel and receive the following critiques and possible elimination;
Chef Anthony prepared a Devil Food Cake w/ Tomato, Gnocchi Filling w/ Brown Sugar & Soy Sauce Butter Cream Topping. Ron said his cake was moist and delicious. He said he did not like the filling and would not eat it again. He liked the frosting.
Chef Laury prepared a Red Velvet Cupcake topped with a Gnocchi Biscuit, Hazelnut B.C. and Sugar Hairdo. Ron said her cupcake was moist and velvety. He said she used the soy sauce wisely however the green tomato brought nothing to her dish.
After careful deliberation he told Chef Laury that in the cake round she was no sweet genius. He told Chef Anthony that he wins the $10,000 and the title of Sweet genius.
