Ted Allen’s Chopped: Mix And Mache Recap 6-16-13

Ted AllenTed Allen introduces the four Chefs that will be competing for the $10,000 and title of Chopped Champion. Tonight the contestants have will be asked to use ingredients in the mystery baskets that include mache, squid and honey distilled liquor.

The judges for tonight’s competition are as follows;

  • Marcus Samuelsson
  • Aaron Sanchez
  • Alex Guarneschelli

The Chefs competing for the title and $10,000 tonight are as follows;

  • Chef Mogan Anthony
  • Chef Roy Handler (Chelsea Handler’s brother)
  • Chef Lara Paul
  • Chef Joseph Miller

Ted Allen told the Chefs that they will be judged on Creativity, Taste, and Presentation and they must use all of the ingredients in the basket in some way.

APPETIZER ROUND  
He tells them that they have 20 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • pickled sausage
  • mache
  • blood oranges
  • southern cabbage

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Mogan prepared Braised Sausage & Cabbage w/ Soffrito. The judges said it was a good dish with lots of familiar flavors and the fried egg brings it all together but the mache became wilted from the heat of the dish.

Chef Roy prepared Seared Sausage w/ Wine Braised Cabbage & Blood Orange Mache Salad. The judges said his dish was warm and comforting and they liked how it all tied together but some sausages were charred and Marcus did not get apples and currants on his dish.

Chef Lara prepared Sausage & Cabbage Flatbread w/ Mache & Apple Salad w/ Blood Orange Vinaigrette. The judges said her dish presented light and lovely flavors and a great presentation but the salad had too many apples in it and the flatbread did not translate into flatbread as the ingredients did mot stick to the bread.

Chef Joseph prepared Southern Choucroute w/ Cabbage Sauce & Blood Orange Dressing. The judges said his dish was big for an appetizer and needed a bit more imagination, but they liked the flavor profile. The blood oranges were not re-purposed. 

After careful deliberation the judges chopped Chef Roy for the above reasons.

ENTREE ROUND 
Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • lobster bisque
  • daikon
  • squid
  • baby leeks

After the Cooks completed their dishes they were presented to the Judges and given the following critiques;

Chef Lara prepared Carmalized Baby Leeks w/ Sauteed Squid Over Vermicelli. The judges said that the vermicelli takes center stage to the basket ingredients and the squid was not cooked properly. They said her dish was not cohesive.

Chef Joseph prepared Leek Rissoto Stuffed Squid w/ Lobster Bisque Sauce. The judges said the rissoto was al dente and the Squid was the center of attention which was good but the lobster bisque was not re-purposed.

Chef Mogan prepared Japanese Style Grilled Squid w/ Grilled Leeks & Daikon. The judges said the sausage was delicious but the squid was not cleaned properly though he had some good flavors on the plate.

After careful deliberation the judges chopped Chef Lara for the above reasons.

DESSERT ROUND 
Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • gala apples
  • green olives
  • honey distilled liquor
  • Kaiserschmarn (German pancake mix)

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Mogan prepared Sable Breton w/ Gala Apple Compote. The judges said they liked what was on the plate and it had great flavors but the dish was a bit too dry.

Chef Joseph prepared Dutch Apple Pancakes & Rosemary Ice Cream w/ Blueberry & Olive Compote. The judges loved the ice cream and pancakes but said the olives were cut too big.

After careful deliberation the judges chopped Chef Mogan and awarded the title and $10,000 to Chef Joseph. Chef Joseph said he has avoided public appearances because of his stutter but will be doing more because of the Chopped experience.
