Ted Allen’s Chopped: Big Fish, Small Basket 6-27-13

Ted AllenTed Allen introduces the four Chefs that will be competing for the $10,000 and title of Chopped Champion. Tonight the contestants will be asked to use Mystery baskets ingredients that include canned chili, fluke and crab apples.

The judges for tonight’s competition are as follows;

  • Scott Conant
  • Geoffrey Zakarian
  • Aáron Sanchez

The Chefs competing for the title and $10,000 tonight are as follows;

  • Chef Salvatore Lima, N.Y.
  • Chef Palak Patel, N.Y.
  • Chef Steve Eakins, N.Y.
  • Chef Paul Joseph, N.Y.

Ted Allen told the Chefs that they will be judged on Creativity, Taste, and Presentation and they must use all of the ingredients in the basket in some way.

APPETIZER ROUND  
He tells them that they have 20 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • purple ninja radishes
  • canned chili
  • mescal
  • seitan

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Sal prepared Sauteèd Seitan w/ Mushrooms & Peppers. The judges said great levels of flavor. The bacon wrapped itself around the dish. They could not taste the mescal which he sprinkled on the dish with 10 seconds left.

Chef Palak prepared Seitan Curry w/ Apples & Onions. The judges said the curry highlighted the seitan and the dish had great flavor. The mescal shows up, but the dish is a bit one note. Tortilla not toasted enough.

Chef Paul prepared Braised Seitan w/ Mescal Reduction & Radish Puree. The judges said the chili was undeveloped, the puree was smooth but the dish was screaming for something to pull it together.

Chef Steve prepared Beef Chili Quesadillas w/ Purple Radish Salsa & Mescal Seitan Creme. The judges said the quesadillas was a great format for the ingredients and it was creative and clever but the too much mescal in the creme. 

After careful deliberation the judges chopped Chef Paul for the above reasons.

ENTREE ROUND
Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • liquid aminos
  • fluke
  • beet greens
  • alfredo sauce

After the Cooks completed their dishes they were presented to the Judges and given the following critiques;

Chef Palak prepared Seared Fluke w/ Coriander & Panko Bread Crumbs & Coconut Sauce & Potato Chips w/ Fried Vermicelli. The judges said the vermicelli was unnecessary but did not take away from the dish. The creamed beet greens tasted like spinach and the chips were great.

Chef Steve prepared Cornmeal Crusted Fluke w/ Beet Greens Two Ways & Creamed Asparagus. The judges said the cornmeal was not cooked enough but he created big flavors with subtle nuances. The fish was cooked perfectly. The greens over cooked a bit.

Chef Sal prepared Linguine Mare E Monti w/ Greens, Tomatoes and Pi Nuts. The judges said the pasta was the best they ever ate on the show and fish in every bite. The greens incorporated good but the parsley was not. The dish however was not very creative.

The judges had a hard time with their decision because all three entree’s were great but when it was all said and done the judges chopped Chef Sal because he was not creative enough.

DESSERT ROUND

Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • sfogliatelle
  • speck
  • crab apples
  • brewer’s yeast

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Palak prepared a Dessert Sandwich w/ Apple Compote & Cardamom Pastry Cream. The judges said they liked the compote and the pastry cream but the pastry was not really transformed by toasting it.

Chef Steve prepared Speck Ice Cream w/ Crumble & Fritters. The judges said the fritters were dry and needed powdered sugar on them. The ice cream was superb and the crumble was great.

After careful deliberation of all of the courses the judges chopped Chef Steve and awarded Chef Palak the $10,000 and title of Chopped Champion. Chef Steve was not happy with the verdict as he would now have to shell out the money for his engagement ring which he put off paying for the last 10 years. Sore looser.
