Ted Allen’s Chopped: Hero Chefs Recap 9-10-13

Ted Allen introduces the four chefs that are considered heroes in their community who are competing for $10,000 and the title of Chopped Champion. Mystery basket ingredients include chicken soup, scallops and hamburger buns for tonight’s competition.

The judges for tonight’s competition are as follows;

  • Mark Murphy
  • Amanda Freitag
  • Cheryl Barbara ( school chef )

The Chefs competing for the title and $10,000 tonight are as follows;

  • Chef Pedro Rodriguez - NYC’s Rescue Mission
  • Chef Nicki Bogie - Fresh Air Fund
  • Chef Wilhelmina Bell - Children’s Village in Philadelphia
  • Chef Derek Walker - St Joseph Center in California

Ted Allen told the Chefs that they will be judged on Creativity, Taste, and Presentation and they must use all of the ingredients in the basket in some way.

APPETIZER ROUND
He tells them that they have 20 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • ground pork
  • chicken soup
  • pattypan squash
  • barbecue sauce

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Nicki prepares Jerk Pork Meatballs w/ Pan Seared Squash. The judges said the pork was under-cooked, but squash outstanding and flavors in meatballs really good.

Chef Derek prepared Country Pork Dumpling Soup. The judges said did a great job and repurposed soup but dumplings a bit big. Dumplings fluffy and flavorful.

Chef Bell prepared Ground Pork Potato & Squash Ragout. The judges said very interesting flavors but a little sweet with apples and BB sauce. Needed crostini or something.

Chef Pedro prepared Jerk Pork Bolognaise w/ Fried Squash. The judges said his dish was delicious and very flavorful and inventive. Could have used another texture in the bolognaise like cream. Good presentation.

ENTREE ROUND
Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • scallops
  • finger limes
  • tamarillos
  • Chinese broccoli

After the Cooks completed their dishes they were presented to the Judges and given the following critiques;

Chef Derek prepared Seared Scallops w/ Thai Relish & Sauteed Chinese Broccoli. The judges said broccoli cooked to perfection but plating inconsistent. Restaurant quality dish and sauce star of the dish. Scallops not seasoned.

Chef Pedro prepared Seared Scallops w/ Scalloped Potatoes & Sauteed Broccoli. The judges said scallops cooked very nicely. Potatoes cooked great but elements did not come together. Presentation lacking.

Chef Nicki prepared Caribbean Fried Scallops & Pan Seared Scallops w/ Chinese Broccoli & Citrus Sauce. The judges said great flavors but fried scallop batter did not adhere. The citrus component works really well. Brilliant job on the pan seared scallops.

DESSERT ROUND
Ted Allen told the Chefs they have 30 minutes to complete the round and has them open their baskets which includes the following ingredients;

  • aged cheddar cheese
  • granny smith apples
  • hamburger buns
  • vanilla frosting

After the Chefs completed their dishes they were presented to the Judges and given the following critiques;

Chef Nicki prepared Deconstructed Apple Crumb Cake w/ Cheddar Ice Cream. The judges said ice cream delicious but caramel too hard. Love the other aspect of the cheese on the dish with addition of cheese tweel. Great presentation.

Chef Derek prepared Cheddar Apple Cookies w/ Raspberry Cream. The judges said hamburger bun recreated into cookie is great but composition of dish could have been elevated. Cheddar could have been dialed up a bit. Very creative.

CQ_Chopped-Cloche_s4x3_smAfter careful deliberation the judges chopped Chef Nicki and awarded the $10,000 and title of Chopped Champion to Chef Derek.
